Introduction
Cachaça is often the odd duck on the backbar. Confined to the Caipirinha, it hides a rich history and unique identity. Cachaça is not rum and deserves its own place in the spirits world.
What is Cachaça?
Cachaça is a Brazilian spirit made from fresh sugarcane juice, resulting in a fresh, vegetal and aromatic profile.
Legal Definition
Must be produced in Brazil, from fermented sugarcane juice, between 38–48% ABV, with max 6g sugar per litre.
Production
Harvesting, milling, fermentation, distillation and ageing define the process. Speed and freshness are key.
Brazilian Woods
Unique woods like Amburana and Bálsamo create distinctive flavours unlike oak-aged spirits.
Buying Tips
Look for artisanal producers, pot stills, and be cautious with colour and sugar additions.
